I had a lot of fun making the subject of the photo for today. Much to my husband and daughter's anguish though, as the cake had to be baked yesterday, cooled, filled with chocolate cream, coated in chocolate mousse and then chilled overnight for the mousse to set. Then this morning I learnt a new cake decorating trick, the topic of todays post, I is for Icing, more specifically mirror glaze icing.


It was pretty time consuming to make, but a lot of fun, and I enjoyed the randomness of the colours at the end. Unfortunately I am still getting used to my gel food colouring and I go a little heavy handed, leaving it a lot darker than I had hoped for, but this cake was a test run anyway before a couple of special cakes I will be making soon, so it was okay to make some mistakes, I will learn before the important non-test cakes.

I think in this house test cakes tend to be some of the most preferred ones though, because everyone gets to try a slice and they don't have to wait for special occasions for cakes! Still, we have to wait a few more hours for hubby to come home from work before slicing this one open and seeing how it looks (and more importantly tastes!) when sliced. Trying to keep my daughter away as she stares at it with hungry eyes is the hardest part of making this I am sure!


If we you want to try your hand at gorgeous mirror glazed icing there are a heap of recipes and Youtube tutorials on the web for it, honestly just google 'Mirror Glazed Icing'. The specific recipe and directions I used were from Southern FATTY, which I just found from googling and I am happy to say following the instructions step by step worked an absolute treat, even with having to convert and substitute things for the Australian / American differences. I have noticed there are different recipes out there, all seem fairly similar but there are some changes between them, so maybe try and find one that you think will suit your needs the best.
